The Willoughby Hotel Welcomes Award Winning Chef To The Team

The Willoughby Hotel is happy to announce the appointment of multi-award winning chef Jason Lucas as the new head chef of The Willoughby Hotel bistro.

Jason recent appointment at The Willoughby Hotel follows positions at Blue Martini and the Cruise restaurant in Circular Quay, the latter netting him an amazing four AHA awards with a further two finalist positions, all in the space of 3 years. In 2009 Jason took out both the best chef and best fine dining restaurant categories.

Jason now looks forward to sharing his modern contemporary style with the North Shore. Already we have seen the introduction of an expansive and innovative specials selection, which includes Jason's signature dish; pan seared Canadian sea scallops served with Granny Smith apples, celeriac remoulade, apple balsamic and micro rocket. Similarly, in response to the eager insistence of our patrons, Jason's focus includes the provision of a new selection of desserts. The most popular of these has been his chocolate garden; a mix of home made chocolate, mascarpone and fresh berries, made to mimic a garden patch.
Jason's experience is not limited just to bistro service, his time at Cruise Bar equipping him with the skills to service functions numbering into the thousands. His skill with canap├ęs will see a range of delicacies for you to sample at your next gathering!

Willoughby Hotel's venue manager, John McGurk said "We are extremely pleased to welcome Jason to the team. His experience and expertise will inject new life into the hotel's food offering."

This is only the beginning of Jason's attempt to put his stamp on an already iconic food offering at the Willoughby, with a new menu looking to be launched in its entirety in late August. Whilst the favourites that you have come to know and love will remaina on the menu, we hope you will join us in experiencing Jason's contribution to Willoughby Hotel's dining experience.
